Over the weekend, I attended the most beautiful wedding for my nephew and his bride!  I got to spend some time with my husband’s side of the family, and my parents!  It’s always tons of fun to spend time with those I love!  We got to chatting about this new “diet” called Whole 30–now they don’t want you to say diet, because it’s really a way of life.   I got to spend some time discussing the food requirements with my brother and sister-in-law who lost a substantial amount of weight on whole 30, and just raved about how they felt and the energy they had while doing it.  When I’m trying to eat healthy and drop a few pounds, whole 30 is pretty dang close to how I choose to eat anyway…I usually avoid sugars, high carbs, and processed foods, and I attempt to introduce healthy substitutes for myself.  I had dinner all planned out, and I decided to do a spin on my usual recipe for curry, for one that was Whole 30 approved.  It was delicious!  I know you will enjoy this.

If you have never used Yellow Curry Paste,  you can find it in the Asian section of your grocery store!  Yellow curry paste is a medley of spices.  It has garlic, lemongrass, salt, shallot, dried red chili, coriander seed, lime peel, curry, cumin, cinnamon, turmeric, cardoon and nutmeg! WOW!  What a punch of flavors!  You also get a subtle sweetness and fall flavoring to the curry by using the “raw apple cider.” I hope that you enjoy this video…it’s my first recipe video on youtube for my blog!  Let me know how you feel about it.  This is a healthy way to maintain your weight during the holiday season!  Also, I have a few more healthy recipes coming your way this month.   Enjoy!

1 T. Olive Oil

1 Onion

1lb Ground Turkey

4 small yukon gold potatoes, cut into thin wedges

1 large carrot, sliced thin

1/3 cup Yellow Curry Paste

1 -15oz can Coconut Milk-full fat

1 and 1/2 cups raw apple cider

2 cups chicken broth

Kosher salt to Taste

*Top with fresh avocado, raw cashews and even fresh cilantro or basil!

  1. In a medium heat pan, add olive oil and onions, then add ground turkey and saute until nearly cooked through.
  2. Then add all other ingredients, bring to a simmer, cover with lid and simmer for 15-20 minutes until the potatoes and carrots are tender and cooked through.
  3. Then remove the lid, and allow some of the liquid of the broth to cook down and evaporate into a creamy sauce (this is up to your personal preference).
  4. Top with fresh avocado, raw cashews and even fresh cilantro or basil.
