This recipe is SOOOOOO easy to mix up, and my family and neighbors loved them! It literally took me less than five minutes to feed a whole crowd. When you’re finished mixing, just pour them in to muffin liners in the muffin tins. This recipe makes approximately 48 muffins, so be sure to make them for a crowd! I delivered them to my neighbors, and kept a few for myself. Hope you enjoy this easy recipe this November!
Pumpkin Spice Muffins with Chocolate Chips
Makes 48 cupcakes
1 (29oz) Can Pumpkin
4 cups sugar
1 1/2 cup oil
1/2 cup water
8 eggs, beaten
1 Tablespoon Vanilla Extract
4 cups flour
4 teaspoons Baking Powder
2 teaspoons baking soda
1 teaspoon Kosher Salt
4 teaspoons cinnamon
2 teaspoons pumpkin pie spice
1 (23oz) bag of Large Milk Chocolate Chips
Powdered Sugar for Dusting
- Preheat oven to 350 degrees.
- Mix all ingredients together by hand in a large bowl, first the wet then add the dry. Stir in Chocolate Chips last by hand.
- Line Muffin tins with muffin liners and fill with batter 3/4 of the way full.
- Bake at 350 degrees for 23-27 minutes, or until toothpick comes out clean.
- Dust with powdered sugar
