Sweet and Crunchy Asian Coleslaw—My Hubby’s Favorite Slaw

For years, my husband has requested this Asian coleslaw as one of his favorite side dishes for his birthday meal!   What can I say?  It’s delicious!   It’s also an easy recipe to double or triple for a huge family gathering.  Make the salad ahead of time, and reserve the dressing until just before serving it.   It’s a go-to summer side that pairs perfectly with any backyard BBQ.  

WHAT’S IN THE MIX? 

This coleslaw is unique because it doesn’t use your traditional mayonnaise for the salad dressing base, instead it is a sweet and tangy vinaigrette to compliment the salted and roasted sesame seeds and almonds that give the slaw extra texture.   Believe it or not, the secret ingredient to this salad is your basic chicken flavored Ramen Noodle packet.  Shocking…..Right!!!! But trust me, the extra crunch of the noodles with the “chicken flavored, bullion” packet  in the salad dressing ads the perfect punch of flavor to the vinaigrette.     

Asian Coleslaw—My Hubby’s Favorite Slaw!

2 Packages Shredded Cabbage Coleslaw Mix

2 Packages Chicken flavored Ramen Noodle, Broken Into Pieces

1 Cup Sliced Almonds, roasted and salted

2 Small Cans Mandarin Oranges

1 Cup Sunflower Seeds, Roasted and salted

1 Bunch Green Onions, chopped

For The Dressing:

1/2 Cup Sugar

3/4 Cup Oil

1/3 Cup Vinegar

2 Chicken Flavored Ramen Noodle Powder Seasoning Packets

Mix all the salad ingredients together.    For dressing, shake all dressing ingredients in a mason jar.   Toss salad in dressing just before serving.

*Sometimes if I double or even triple the recipe, I will not use all the dressing.  This salad dressing goes along way, and so if you are making a large batch of slaw for a group, feel free to even cut the dressing in half depending on your taste
